This Mexican rice is one of my favorite rice cooker recipes — and one of my favorite recipes in general. Why is it so great? It’s a delicious side dish that goes well with nearly any Mexican-inspired meal. And in addition to tasting fabulous, it’s super simple to make! Just combine all the ingredients in a rice cooker, and press start. This recipe is easy to double for a crowd, and makes great leftovers.
Rice cooker Mexican rice
Serves 3-4
Good Food
- 1 cup long-grain rice
- 1 medium carrot, diced
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1/2 of a jalapeƱo pepper, minced
- Dash of ground cumin
- Dash of ancho chili powder
- Dash of freshly ground black pepper
- 1 Tbsp olive oil
- 2 cups chicken broth
- 3 oz. tomato paste
- 1 bay leaf
Combine all ingredients, except the bay leaf, in a rice cooker. Whisk together until evenly mixed. Place the bay leaf on top and cook according to manufacturers directions.
After the rice has finished cooking, remove the bay leaf and stir well. Enjoy with your favorite Mexican meal!

This recipe is great! I made it for the Mexican food lovers in my home who can’t wait until I make it again. I especially like that it works well in my rice cooker. Also, the leftovers keep surprisingly well in a refrigerated container (they don’t dry out like some other rice recipes do). Amazing recipe — will definitely make again!
