Banana chocolate chip muffins

These are, without question, my favorite muffins. They are my go-to when I sign up to bring Sunday School treats, and we are never sad when we have to bring any leftover muffins home. I hope you decide to give them a try!

Makes 12 muffins
Good Food

  • 1 1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 egg
  • 3 ripe bananas, mashed (about 1 1/3 cups)
  • 1/3 cup butter, melted
  • 1 tsp vanilla extract
  • 3/4 cup semisweet chocolate chips or chunks

Preheat oven to 375 degrees. In a large bowl, whisk together the dry ingredients (flour, sugar, baking soda, cinnamon, salt). Set aside.

In another bowl, whisk the egg, bananas, melted butter, and vanilla until blended (I usually use my stand mixer). Add the flour mixture, and stir just until moistened. Fold in the chocolate chips/chunks.

Fill paper-lined muffin cups three-fourths full. Bake for 17-20 minutes, or until a toothpick inserted in the center of the muffin comes out clean. Cool for 5 minutes before removing to a wire rack to cool. Serve warm or at room temperature.

I love these muffins! They are soooo tasty — especially with extra chocolate chips added to them. I’ll never feel blue eating them for breakfast or as a dessert!
